<p><strong>Godrej Vikhroli Cucina</strong> launched the eighth edition of the <strong>Godrej Food Trends Report</strong> <strong>(GFTR) 2025 </strong>at a showcase in Mumbai through an evocative food theatre performance titled Feast for the Future. Themed “Seasons,” this year’s edition was unveiled not through conventional speeches or slides, but through storytelling, satire, and sensory drama that celebrated food as memory, identity, and emotion.</p>



<p>Based on contributions from over 190 culinary voices, including chefs, nutritionists, mixologists, food writers, and entrepreneurs, the 2025 edition of the report offers a deep dive into the forces shaping India’s evolving food and beverage landscape. Seasonality takes centre stage, with 82% of experts pointing to a renewed consumer focus on local, seasonal produce and culturally rooted ingredients. This revival is influencing everything, from fine dining to home cooking, signalling a return to intuitive, time-and-place-based eating.</p>



<p>Speaking on the theme, <strong>Tanya Dubash, </strong><em>Executive Director &amp; Chief Brand Officer, Godrej Industries Limited and Associate Companies, </em>shared: “At Godrej Industries Group, food is more than sustenance, it is culture, identity, memory, and possibility. That belief is what powers the Godrej Food Trends Report, our annual labour of insight and imagination. Since 2018, with insights from over 2,000 food experts, the report has captured the pulse of our evolving foodscape — from mindful eating and culinary nostalgia to the rise of indigenous ingredients and beyond. Today, the report plays an even deeper role. GFTR has evolved into a strategic lens through which new products, menus, and food narratives are being shaped. This year, we explore the theme of seasonality. As the world embraces authenticity and sustainability, seasonal eating, once second nature to us, is making a meaningful comeback”</p>



<p>The report notes that 74% of experts predict a surge in immersive, multi-course tasting menus, driven by the rise of experiential dining. 66% highlight frozen snacks as an everyday essential, with products like momos, kebabs, and burger patties gaining gourmet status in Indian home kitchens. Another 85% point to Himalayan cuisines as a growing trend, owing to their clean-label appeal, sustainability, and ingredient-led storytelling.</p>



<p>Meanwhile, 78% of contributors foresee a growing demand for heritage alcohols such as feni and mahua. Goa has been crowned the top food destination of the year by 89% of experts, thanks to its blend of hyperlocal ingredients, global culinary influence, and thriving food tourism scene. The launch of the Godrej Food Trends Report 2025 showcased prominent brands such as Crazy Cock Single Malt Whisky, Six Brothers Mahura, Simba Beer, and Sula Wines, all of whom served as experience partners for the evening that reflected the report’s cultural and sensory themes.</p>

<p>The theatrical experience brought to life a vibrant mix of characters, a fine-dining purist, a frozen food loyalist, a heritage-obsessed traditionalist, and a social media-fuelled foodie, each representing a different lens through which modern India experiences food. Their playful conflict and eventual resolution set the stage for the unveiling of the year’s key culinary trends, delivered not as static insights, but as lived experiences.</p>



<p>“The idea was to move away from simply revealing trends, and instead stage them—let people feel them,” said<strong> Gia Singh Arora, </strong><em>Curator of the theatrical experience.</em> “Food is inherently emotional. This performance allowed the audience to confront their own biases, preferences, and beliefs—leaving them entertained, but also introspective.”</p>

<p>This Children’s Day, Godrej Vikhroli Cucina, the owned media platform of the Godrej Industries Group (GIG), celebrates India’s rich culinary heritage through a meaningful campaign. In collaboration with celebrity Chef Amrita Raichand, the initiative invites parents to rediscover traditional flavours and incorporate them into their children’s meals. The campaign, inspired by the theme of provenance, aligns with the Godrej Food Trends Report 2024 (GFTR’24), exploring the diverse origins of Indian ingredients and culinary practices.</p>



<p>The highlight of this Children’s Day campaign is a specially curated recipe video, “#CoolKids Paneer Parathas”, where Chef Amrita demonstrates how to prepare nutritious, heritage-inspired paneer parathas using traditional ingredients like Godrej Jersey Ghee and Godrej Jersey Paneer. The recipe celebrates the authentic flavors of India while underscoring the nutritional benefits of age-old ingredients that are integral to India’s culinary legacy.</p>

<p>Godrej Vikhroli Cucina has released a new report titled-&nbsp;&#8216;Godrej Food Trends Report 2024&#8217; that unveils the latest trends in monsoon snacking, emphasizing health, nostalgia, and innovative flavours. From healthier twists on classic comfort foods to nutrient-packed bites, this season’s trends ensure that the monsoon snacking is both enjoyable and guilt-free.</p>



<p>The report compiled insights from over 190 visionary thought leaders including celebrity chefs, influential bloggers, and dedicated nutritionists, highlighting the key trends that are set to revolutionize monsoon snacking.</p>



<p><strong>Key Trends of <strong>Monsoon Snacking</strong> are</strong>:</p>



<p><strong>Air-Fried Options on the Rise:</strong> A 8.5% of experts favor non-fried options this monsoon season. The trend is shifting towards baked or air-fried alternatives. While traditional favourites like vada pav and samosa continue to be enjoyed occasionally, healthier versions such as baked samosas are gaining popularity. Nut-enriched and non-fried/air-fried options deliver the same crispiness without the high-fat content, aligning with the global movement towards healthier eating.</p>



<p><strong>Nutritionally Fortified Options</strong>: &nbsp;78.8% of experts predict a rise in nutritionally fortified snacks. With the shift towards work-from-home and hybrid work models, snacks have become an integral part of meal plans. People are now more inclined towards healthier ingredients like makhana and millets, and consciously choosing baked and puffed options over deep-fried ones. These snacks offer a satisfying crunch with a guilt-free boost of nutrients.</p>



<p><strong>Ready-to-Eat Snacks Solutions:</strong>&nbsp;&nbsp;With 51.9% of experts predicting increased popularity, ready-to-eat snacks are the perfect dish for on-the-go individuals. These convenient options cater to busy lifestyles, providing quick, nutritious choices like protein bars, energy bites, and pre-packaged fruit and nut mixes. For everyone who prefers classic tastes, ready-to-eat frozen snacks like air-fried nuggets and millet patties are crafted to meet diverse dietary needs, ensuring snacking is accessible anytime, anywhere.</p>



<p><strong>Traditional Flavours and Textures: </strong>Nostalgia plays a significant role, with 76.9% of experts favouring traditional flavours and textures. While parents strive to introduce healthy snacks to their children, a balance is often struck with familiar, comforting options. Traditional snacks, enriched with healthy nutrients and prepared using low-fat or baked methods, will continue to grow in popularity. These snacks provide a sense of nostalgia while adhering to healthier cooking practices.</p>

This includes a notable preference for non-fried snacks, a growing interest in nutritionally fortified options, and a continued love for traditional flavours.
