<p class="wp-block-paragraph">GIFT City—India’s first operational smart city and International Financial Services Centre (IFSC), and a project of national importance—has announced that <strong>Bastian Hospitality,</strong> one of India’s leading premium food and beverage (F&amp;B) groups, is entering Gujarat with a flagship dining and lifestyle destination at GIFT City’s Central Park. The upcoming venue,<strong> Bastian Republic, </strong>will operate the food zone spread across one lakh sq. ft. at Central Park, marking a major milestone in enhancing GIFT City’s growing social and lifestyle ecosystem.</p>



<p class="wp-block-paragraph">Bastian Republic will operate the food zone, which has been developed as part of phase 1 of the Central Park, along with public plazas, event areas, jogging and cycling tracks, and vibrant social spaces. The development underscores GIFT City’s commitment to building a world-class urban environment that seamlessly integrates business, living, and leisure.</p>



<p class="wp-block-paragraph"><strong>Sanjay Kaul, </strong><em>Managing Director &amp; Group CEO, GIFT City,</em> said, “The entry of Bastian into GIFT City marks a significant addition to our expanding social ecosystem. <p class="wp-block-paragraph">From its beginnings as a seafood-focused restaurant, Bastian has grown into a multifaceted brand that defines India’s contemporary dining and nightlife scene. Over time, the brand has expanded its culinary universe from Italian indulgence at Bizza and Peruvian-Asian flair at Inka to the American comfort of One Street, the charm of Blondie Café, and the regional authenticity of Ammakai, creating experiences that go beyond dining—blending gastronomy with art, music, and culture.</p>



<p class="wp-block-paragraph">Each concept reflects Bastian’s vision to create experiences that go beyond dining, uniting food, culture, and community. The new properties at GIFT City build on this philosophy, offering a vibrant space that inspires connection and delivers an experience far beyond just food.</p>



<p class="wp-block-paragraph">In addition to the Central Park project, Bastian is also in advanced talks with developers at GIFT City to set up another outlet within the city, further strengthening its footprint in Gujarat.</p>



<p class="wp-block-paragraph">With this development, GIFT City continues to shape its identity as a complete “live, work, play” destination, supported by growing social infrastructure that includes international universities, a five-star hotel, GIFT City Club, upcoming riverfront development, and metro connectivity to Ahmedabad and Gandhinagar.</p>

<p class="wp-block-paragraph">Bastian Hospitality unveils Blondie, a thoughtfully designed café in Khar, Mumbai, marking the group’s entry into the specialty coffee space. <strong>Led by Natasha Hemani and Chef Shreya Aggarwal, </strong>Blondie brings a refined yet approachable take on coffee, matcha, and all-day dining, with a focus on ingredients, consistency, and a deep sense of community.</p>



<p class="wp-block-paragraph">At its core, Blondie is about coffee done right. The menu moves beyond the expected, featuring everything from a classic cortado to more inventive offerings that will be highlighted on their monthly specials menu like Mango Sticky Rice Latte, The Blondie Sunrise and Vietnamese Coconut Coffee. </p>



<p class="wp-block-paragraph">The Slow Bar caters to purists, offering hand-brewed V60, French Press, and AeroPress options, with beans sourced from Chikmagalur, including Cask-Aged Whiskey Barrel Brew and Fruit Funk Anaerobic Naturals, alongside standout single origins from Ethiopia and Costa Rica.</p>



<p class="wp-block-paragraph">Equally considered is Blondie’s dedicated matcha bar—the first of its kind in Mumbai—sourcing ceremonial-grade matcha from Kagoshima, Japan. Guests can opt for a traditional Matcha Latte or explore bolder interpretations like the Dreamy S’mores Matcha, layered with house-made chocolate and marshmallow cream, or the Mango Matcha Latte, a seasonal and refreshing nod to local flavors.</p>



<p class="wp-block-paragraph">The food menu, crafted by <strong>Chef Shreya Aggarwal, </strong>balances comfort and creativity. The gluten-free Benne Dosas come with unexpected pairings like bacon &amp; sunny-side-up eggs or prawn thecha, while all-day breakfast classics—Eggs Kejriwal, Akuri, and Carbonara Scramble— thoughtfully crafted with bold and balanced flavours. </p>



<p class="wp-block-paragraph">The pastry case highlights a modern take on French techniques, while desserts range from vegan tiramisu to an indulgent eggless tres leches.</p>



<p class="wp-block-paragraph">“Blondie is about bringing people together over exceptional coffee, bold flavors, and a space that feels both aspirational and welcoming,” <strong>says Ranjit Bindra, </strong><em>Founder &amp; CEO, Bastian Hospitality.</em></p>



<p class="wp-block-paragraph">The space itself—bathed in natural light and softened with warm blue tones and textured finishes—is designed to transition seamlessly from a quiet morning retreat to a lively evening hangout. Beyond the café experience, Blondie will host an evolving lineup of events celebrating music, art, and wellness, reinforcing its role as a community-driven space. The place is pet friendly.</p>
